How set availability in additional calendar?

We have a project at my non-profit where we need to schedule appointments for certain staff members.

I've discovered multiple or additional calendars, which is what I want, I think.

Question: Is it possible to set up "Availability" for an additional calendar?

Let's say the staff has decided they are available for appointments from 10 to 2 every Tuesday and Thursday.

I have set up an additional "Big Project" calendar.
But I don't see how to set availability for it.

I can set up availability under Outlook Options and Work Hours, but that's for all the calendars. I want an additional calendar, with specific/less availability.

Can anyone tell me how to do this?
